Copenhagen overflows with Michelin stars and avant-garde restaurant Noma has a lot to do with it. But after a trip to Denmark, I discovered there are many other restaurant chefs beyond Copenhagen who are popping their heads above the parapet. Cue Restaurant Frederikshøj in Aarhus and Henne Kirkeby Kro in Henne, West Jutland who are doing great things and are fine examples of Noma’s ripple effect.
